Ingredients

For the Casserole:

For the Topping:

Instructions

Step 1: Prepare the Green Beans

  1. Bring a large pot of salted water to a boil. Add the green beans and blanch for 4-5 minutes until tender-crisp.
  2. Drain the green beans and immediately transfer them to an ice bath to stop the cooking process. Once cooled, drain and set aside.

Step 2: Make the Creamy Mushroom Sauce

  1. In a large skillet over medium heat, melt the butter. Add the mushrooms and sauté for 5-7 minutes until golden brown and tender.
  2. Stir in the chopped onion and cook for another 3-4 minutes until softened. Add the garlic and cook for 1 minute until fragrant.
  3. Sprinkle the flour over the mixture and stir to combine. Cook for 1-2 minutes to remove the raw flour taste.
  4. Gradually whisk in the broth and heavy cream, stirring constantly to avoid lumps. Bring the mixture to a simmer and cook for 3-4 minutes until thickened.
  5. Stir in the soy sauce, smoked paprika, salt, and pepper. Taste and adjust seasoning as needed.

Step 3: Assemble the Casserole

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the blanched green beans and creamy mushroom sauce. Mix well to coat the green beans evenly.
  3. Transfer the mixture to a greased 9x13-inch baking dish.

Step 4: Add the Topping and Bake

  1. Sprinkle 1 cup of crispy fried onions evenly over the top of the casserole.
  2. Bake in the preheated oven for 25 minutes.
  3. Remove from the oven and sprinkle the remaining ½ cup of crispy fried onions on top. Return to the oven and bake for an additional 5-10 minutes until bubbly and golden.

Step 5: Rest and Serve

  1. Let the casserole rest for 5 minutes before serving. This allows the flavors to meld and makes it easier to serve.
  2. Garnish with fresh parsley (optional) and serve warm.
